• 1 egg plant, peeled, diced
• 1 pound mushrooms, washed, quartered
• 3 tablespoons butter
• Seasonings to taste
• Flour

Instructions

1. After the egg plant has been diced, roll the dice in flour.
2. Shake dice in a strainer.
3. Put in a frying pan the butter, mushrooms, seasonings and egg plant.
4. Cook on moderate fire for about 5 minutes, stirring occasionally to cook all the surfaces of the egg plant and mushrooms.
