Moms enjoy comfort foods just as much as anyone else, and there's no shame in satisfying a sweet tooth with a classically simple recipe. Instead of picking something up at the bakery, show your mom how special she is to you by baking for her.

Mothers Day Dessert Recipes

Each of these Mother's Day dessert recipes will satisfy even the most severe sweet tooth, but they all have something nutritive to offer, too: the blueberries in the pie are fresh and packed with antioxidants, the oats in the cookies boost daily servings of whole grains, and the yogurt in the parfait will give your mom an extra dose of calcium.

Blueberry Pie

In late spring and summer, there's simply nothing better than a pie like this for showcasing fresh fruit. Take your mom to the farmers' market to pick out some blueberries together. This recipe makes one 9-inch pie.

Ingredients

  • 3 1/2 c. fresh, rinsed blueberries
  • 5 T. cornstarch
  • 3 T. cold water
  • 2 T. lemon juice
  • 3/4 tsp. cinnamon
  • 2/3 c. granulated sugar
  • 1 9-inch double piecrust

Procedure

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. After rinsing the blueberries, pat them dry with a dry dishtowel or paper towels.
  3. Whisk the sugar, cornstarch, and cinnamon together in a small bowl.
  4. Add the cold water and lemon juice to the sugar mixture, and whisk until smooth.
  5. Roll out your piecrust, and place the bottom half in the pie pan. Prick it with a fork in several places to help air escape.
  6. Pour the fresh blueberries into the piecrust.
  7. Pour the sugar-water mixture over the berries evenly.
  8. Roll out the top half of the piecrust, and secure it to the sides of the bottom crust. Prick the top of the crust in several places.
  9. Place the pie on a baking sheet to catch any drips, and put the sheet in the oven. Bake the pie for 1 hour or until it is golden brown and bubbling.

Chocolate-Cherry Cookies

These cookies aren't overly sweet or filling, so they're the perfect dessert topper to a heavy meal. The recipe makes 30 small cookies.

Ingredients

  • 1/3 c. all-purpose flour
  • 1/3 c. whole-wheat pastry flour
  • 1 1/2 c. old-fashioned (not quick-cooking) rolled oats
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 stick (6 T.) unsalted butter
  • 3/4 c. packed brown sugar
  • 1/2 c. dried cherries
  • 1/2 c. dried cranberries
  • 1 tsp. vanilla extract
  • 1 egg
  • 3 oz. bittersweet chocolate, chopped coarsely
  • 3/4 c. semisweet chocolate chips
  • 1/4 c. turbinado sugar (Sugar in the Raw)

Procedure

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a large bowl, whisk the all-purpose flour, whole-wheat pastry flour, oats, baking soda, and salt.
  3. In a small saucepan, melt the butter. When it melts, remove it from the heat and stir in the brown sugar until the mixture is smooth. ]
  4. Add the brown sugar and butter to the flour mixture, and stir until combined.
  5. Beat the egg lightly, and stir it into the batter.
  6. Stir in the cherries, cranberries, and chopped chocolate.
  7. Line baking sheets with parchment paper, and drop the cookies by tablespoonfuls onto the sheets.
  8. Bake the cookies for 12 minutes or until they are browning at the edges.
  9. Melt the chocolate chips in a double boiler or in the microwave. Stir with a whisk until the chocolate is completely smooth.
  10. Dip one end of each cooled cookie into the melted chocolate chips. Sprinkle that end with turbinado sugar, and set the cookies on parchment paper in the refrigerator to firm up before serving.

Yogurt Parfaits

Got a health-nut mom? Serve her up one of these delicious parfaits. The recipe makes two parfaits.

Ingredients

  • 1 1/2 c. low-fat vanilla yogurt or Greek yogurt
  • 3/4 c. fresh, rinsed blueberries
  • 3/4 c. fresh, rinsed, sliced strawberries
  • 1/2 c. granola
  • Honey (optional)
  • Mint sprigs (optional)

Procedure

  1. In tall parfait glasses, layer the yogurt, fruit, and granola. Begin with 1/4-cup scoops of yogurt in each parfait glass.
  2. Add 1 tablespoon of granola and a combined 1/4 cup of blueberries and strawberries to each glass.
  3. Repeat the above layering twice for each glass or until you have distributed all of the yogurt, berries, and granola evenly.
  4. Top each parfait with a small sprinkle of granola and berries. Drizzle with honey and top with mint before serving if you'd like.
