Molasses Sponge Pudding Recipe

Ingredients for Molasses Sponge Pudding
- 2 cups flour
- 2 teaspoons powdered ginger
- ½ teaspoon baking soda
- ½ cup vegetable shortening
- ½ cup molasses
- 1 egg
- 1 tablespoon breadcrumbs
- ¾ cup milk
- ½ teaspoon salt
- For Sauce
- 1 teaspoon vegetable shortening
- 1 teaspoon cornstarch
- 2 tablespoons lemon juice
- 3 tablespoons molasses
- 1 cup hot water
Instructions
- For pudding.
- Mix flour, breadcrumbs, soda and ginger together, then rub in vegetable shortening with finger tips.
- Beat egg, add milk, molasses, salt and stir into dry ingredients.
- Turn mixture into vegetable shorteninged mold, cover with greased paper and steam steadily for two hours.
- Turn out and serve with sauce.
- For sauce.
- Blend vegetable shortening and cornstarch together, add molasses, water, and lemon juice, and boil a few minutes.
