Ingredients for Mixed Vegetable Souffle Recipe

  • 1 tablespoon vegetable shortening
  • ¼ lb. cooked carrots
  • ½ lb. boiled potatoes
  • ¾ lb. boiled turnips
  • ½ lb. stewed onions
  • 1 tablespoon chopped parsley
  • Salt and pepper to taste
  • 3 eggs

Instructions

  1. Chop onions and mash all vegetables.
  2. Combine the onions and vegetables, then mix well.
  3. Add vegetable shortening, seasonings, and yolks of eggs.
  4. Beat up whites of eggs to stiff froth and fold them into mixture, then turn it into vegetable shorteninged fireproof dish and bake thirty minutes in moderate oven.
