Instructions
- Roll cooled mashed potato (leftover) into balls and flatten into cakes.
- The cakes may be patted down in a little flour before cooking.
- Heat vegetable oil or hot bacon fat in a frying pan until it sizzles; then add the potato cakes.
- Let the potato cakes brown on one side, then turn and brown the other side.
- For baked cakes, set the cakes in a buttered baking dish dish, put a small piece of butter on the top of each and let cook in the oven until hot and lightly browned.
