Mashed Potato Cakes Recipe 1

Instructions

  1. Roll cooled mashed potato (leftover) into balls and flatten into cakes.
  2. The cakes may be patted down in a little flour before cooking.
  3. Heat vegetable oil or hot bacon fat in a frying pan until it sizzles; then add the potato cakes.
  4. Let the potato cakes brown on one side, then turn and brown the other side.
  5. For baked cakes, set the cakes in a buttered baking dish dish, put a small piece of butter on the top of each and let cook in the oven until hot and lightly browned.
