Ingredients for Marshmallow Icing

  • 1½ cups sugar
  • ½ cup water
  • ½ pound marshmallow, melted
  • 1 tablespoon butter (sweet)
  • ½ teaspoon vanilla extract

Instructions

  1. Boil sugar and water to 238 degrees F.
  2. (To test temperature: After boiling a short time, the syrup when dropped with a spoon into cold water will form a "soft ball" at 238 to 240 degrees F.) Remove from fire and add the melted marshmallow and the butter.
  3. Then the vanilla extract.
  4. Beat until thick enough to spread on cake.
