Instructions

  1. Make the Butterscotch Parfait using 1/4 cup maple syrup in place of brown sugar and water.
  2. After cooking with egg yolks pour over 2 egg whites beaten stiff and finish as above.
  3. Butterscotch Parfait Recipe
  4. Put in saucepan
  5. 1/3 cup brown sugar, add
  6. 1 tablespoon butter, stir until melted and boil one minute.
  7. Add
  8. 1/4 cup water and again stir and cook until butterscotch is melted.
  9. Beat
  10. 2 egg yolks in top of small double boiler until very light, add
  11. Syrup gradually and beat and cook over hot water until very light and fluffy.
  12. Put in refrigerator pan and chill.
  13. Beat
  14. 1/2 pint cream until stiff, add a
  15. Few grains salt and
  16. 1-1/2 teaspoons vanilla and beat in
  17. Egg mixture with a few turns of the egg beater.
  18. Put in refrigerator pan and freeze.
