Maple Custard Recipe

Instructions
- Beat well the yolks of three eggs, add a third of a cup of rich maple syrup and gradually two cups of hot milk.
- Cook, surrounded by boiling water, stirring constantly until the mixture commences to thicken.
- Chill and add one- half teaspoon of vanilla extract.
- Beat the whites of eggs to a stiff froth, add a fourth of a cup of sugar, turn into a buttered mold, cover and cook, surrounded by boiling water, for twenty minutes.
- Cool in the form, then unmold and chill.
- Serve the custard in a glass dish, place the meringue on top of the custard and sprinkle with grated maple sugar.
