Maple Custard Recipe

Instructions

  1. Beat well the yolks of three eggs, add a third of a cup of rich maple syrup and gradually two cups of hot milk.
  2. Cook, surrounded by boiling water, stirring constantly until the mixture commences to thicken.
  3. Chill and add one- half teaspoon of vanilla extract.
  4. Beat the whites of eggs to a stiff froth, add a fourth of a cup of sugar, turn into a buttered mold, cover and cook, surrounded by boiling water, for twenty minutes.
  5. Cool in the form, then unmold and chill.
  6. Serve the custard in a glass dish, place the meringue on top of the custard and sprinkle with grated maple sugar.
