Ingredients for Make Ahead Mashed Potatoes Recipe

  • 4 pounds russet (Idaho) potatoes
  • 2 1/2 cups half and half, plus extra if necessary
  • Salt, to taste
  • 6 tablespoons butter

Instructions

  1. Scrub potatoes clean and place, with skin, in a large pot. Cover potatoes with water and bring to a boil.
  2. Simmer for 20-30 minutes or until tender.
  3. Puree or mash the potatoes until lump free.
  4. Warm half and half and stir in to potatoes.
  5. Add salt and beat until smooth.
  6. Can be kept in refrigerator for up to two days.
  7. Add butter before serving.
