Madeira Sabayon Sauce Recipe

Instructions
- Put into the inner vessel of a double boiler four egg yolks and two tablespoons of powdered sugar.
- Have the water in the outer vessel rapidly boiling, and whip the sauce rapidly for three minutes.
- Pour in slowly half a cup of Madeira wine, stir for two minutes longer; take from the fire and strain over the pudding.
- Beat two eggs until very light; then add one cup of confectioners' sugar and one cup of thick cream.
- Beat until the whole is the consistency of whipped cream.
