Ingredients for Mackerel With Rice And Olives
- 2 mackerel, medium size
- 1½ cups rice, washed
- 4 tomatoes, sliced
- 1 cup olives, chopped, pitted
- 4 tablespoons butter
- 1 onion, chopped
- Seasonings to taste
Instructions
- Boil the rice for 20 minutes in plenty of salted water.
- Drain off water.
- While rice is boiling, place all other ingredients with the fish in a baking pan and bake for 20 minutes in moderate oven.
- Then add the rice and mix gently with a fork.
- Bake 10 minutes longer.
- Then serve.
