Ingredients for Lobster Croquettes

• 2 cups finely chopped lobster
• 1 teaspoon salt
• 1 teaspoon mustard
• Few grains cayenne
• 1 cup White Sauce No. 3

Instructions

1. Combine in the order given, cool, form into balls, roll in beaten egg and bread crumbs and fry in hot fat.
2. Drain on brown paper.
