Ingredients for Lima Bean Salad

  • 1½ cups of cooked Lima beans (fresh, canned or dried)
  • ¼ teaspoon of salt
  • ½ a chilli-pepper, chopped exceedingly fine
  • 1 teaspoon of grated onion
  • 1 tablespoon of fine-chopped parsley
  • 3 or 4 tablespoons of oil
  • 1 to 2 tablespoons of vinegar

Instructions

  1. To the beans add the onion, chilli-pepper, salt and parsley, and mix thoroughly; add the oil and mix, and then the vinegar and mix again.
  2. This salad may stand some time before serving.
