Ingredients for Lentil Soup Recipe 5

  • 1 cup lentils
  • 1 quart of boiling water
  • 1 pint of milk
  • 1 tablespoon of flour cooked in a tablespoon of butter
  • Dash of paprika, salt, and a small amount of sugar to taste

Instructions

  1. Pick over and wash a cup of lentils.
  2. After soaking them for three hours, put on the stove to cook in boiling water.
  3. Cook slowly until soft and until the water is reduced one-half.
  4. Rub through a strainer and add a pint of milk.
  5. When it begins to boil, stir in 1 tablespoon of flour cooked in a tablespoon of butter.
  6. Season with paprika, salt, and a small amount of sugar.
  7. Serve with croutons.
