Ingredients for Lentil Soup Recipe 3
- 1 cup brown lentils
- 1 teaspoon finely chopped onion
- 1 tablespoon flour
- 2 tablespoons oil or butter
- 1½ teaspoons salt
- Water

Instructions
- Wash the lentils and soak them overnight.
- In the morning, cook the lentils in cold water, and cook slowly for two or three hours or until thoroughly tender.
- Rub them through a colander.
- Brown the onion and flour in the oil.
- Add these and the salt to the lentil puree. Add sufficient hot water to make the soup of the proper consistency.
- This should make about one quart of soup.
- The onion, oil, and flour may be omitted, and the soup seasoned with cream or milk.
