Ingredients for Lentil Soup Recipe 3

  • 1 cup brown lentils
  • 1 teaspoon finely chopped onion
  • 1 tablespoon flour
  • 2 tablespoons oil or butter
  • 1½ teaspoons salt
  • Water

Instructions

  1. Wash the lentils and soak them overnight.
  2. In the morning, cook the lentils in cold water, and cook slowly for two or three hours or until thoroughly tender.
  3. Rub them through a colander.
  4. Brown the onion and flour in the oil.
  5. Add these and the salt to the lentil puree. Add sufficient hot water to make the soup of the proper consistency.
  6. This should make about one quart of soup.
  7. The onion, oil, and flour may be omitted, and the soup seasoned with cream or milk.
