Ingredients for Lentil And Dried Olive Hash

  • 2½ cups stewed lentils
  • 2 potatoes
  • 1 large onion
  • ¾ cup tomato
  • ¼ cup vegetable oil
  • Dried olives sufficient to make¾ cup when chopped

Instructions

  1. To freshen the olives, soak them in cold water, then bring to the boiling point and pour off the water.
  2. It may be necessary to do this twice.
  3. Then cut up the olives and stone them.
  4. Boil the potatoes or use left-over boiled potatoes.
  5. Chop the onion, and cook it in the oil till it begins to turn yellow.
  6. Chop all the ingredients together, put into an oiled pan, and bake till brown.
