Ingredients for Lemon Wafers

  • 2 eggs
  • 2 cups sugar
  • 2 cups vegetable shortening
  • 2 cups milk
  • 5 cents baker's ammonia
  • 5 cents oil of lemon
  • Flour to make stiff dough
  • 2 teaspoons salt

Instructions

  1. Cover ammonia with milk and let soak over night.
  2. Next morning add sugar, vegetable shortening, salt, eggs well beaten, lemon and enough flour to make a stiff dough.
  3. Roll very thin, cut in squares or diamonds, lay on vegetable shorteninged tins and bake from five to seven minutes in hot oven.
  4. Sufficient for one hundred and eighty-six wafers.
