Ingredients for Lemon Thyme Sorbet Recipe
- For a 1.5 quart ice cream maker
- Simple Syrup (2 parts water/1 part sugar)
- Zest of 1 lemon (optional)
- 1/2 c. lemon juice or RealLemon or 1-6oz can Lemonade concentrate (thawed)
- 1 Tbsp. thyme (use fresh or dried leaves, NOT ground)

Instructions
- Follow the directions for your specific Ice Cream Maker to make a Simple Syrup. This will depend on the capacity of the freezer bowl. Ingredients can be adjusted as needed.
- Bring the Simple Syrup to a boil.
- Add the the thyme leaves (and lemon zest) and let the mixture boil for 2 minutes. This will infuse the flavor of the thyme and zest more evenly thru the mixture.
- Remove the mixture from the heat and add the lemon juice.
- Stir mixture and let sit until it reaches room temperature.
- Taste the mixture and adjust the flavors to individual liking
- Chill the mixture for 4 hours (this will also help with infusing the flavors as the mixture cools).
- Pour mixture into freezer bowl and follow the manufacturers directions to finish and ENJOY!
- This is a wonderful summer sorbet with a sweettart flavor and an interesting contrast with the thyme.
