Lemon Rice Pudding

Ingredients for Lemon Rice Pudding Recipe

  • 1 cup white sugar, divided
  • 3 eggs, separated
  • Juice of 1 lemon
  • 1 cup milk
  • Grated rind of 1 lemon
  • 2 cup cooked white rice

Instructions

  1. Preheat oven to 350 degrees.
  2. Blend together the rice, 1/2 cup of sugar, milk, and lemon rind.
  3. Add two beaten egg yolks and stir.
  4. In a separate bowl, beat the egg whites until stiff with peaks. Fold into rice.
  5. Prepare a casserole dish by oiling lightly, then pour in rice mixture.
  6. Top with cinnamon.
  7. Bake at 350 degrees.
  8. Meanwhile, combine lemon juice, remaining 1/2 cup of sugar, and last egg yolk in a small pan.
  9. Bring to a quick boil, then remove from heat and whip in stiff egg white.
  10. Return to low heat for 1-2 minutes until lemon sauce is thickened.
  11. Stir lemon sauce into rice pudding just before serving.
