Lemon Rice Pudding

Ingredients for Lemon Rice Pudding Recipe
- 1 cup white sugar, divided
- 3 eggs, separated
- Juice of 1 lemon
- 1 cup milk
- Grated rind of 1 lemon
- 2 cup cooked white rice
Instructions
- Preheat oven to 350 degrees.
- Blend together the rice, 1/2 cup of sugar, milk, and lemon rind.
- Add two beaten egg yolks and stir.
- In a separate bowl, beat the egg whites until stiff with peaks. Fold into rice.
- Prepare a casserole dish by oiling lightly, then pour in rice mixture.
- Top with cinnamon.
- Bake at 350 degrees.
- Meanwhile, combine lemon juice, remaining 1/2 cup of sugar, and last egg yolk in a small pan.
- Bring to a quick boil, then remove from heat and whip in stiff egg white.
- Return to low heat for 1-2 minutes until lemon sauce is thickened.
- Stir lemon sauce into rice pudding just before serving.
