Ingredients for Lemon Meringue Pie Recipe

  • 4 tablespoons lemon juice
  • 2 tablespoons flour
  • 1 cup sugar
  • Pinch of salt
  • 1 teaspoon grated lemon rind
  • 2 tablespoons cornstarch
  • 2 cups water, boiling
  • 1/2 cup cold water
  • 3 eggs, separated
  • 3 tablespoons sugar
  • Pastry pie crust

Instructions

  1. Line pie plate with pie crust and bake for 10 minutes at 350 degrees until crust is a light brown.
  2. Mix cornstarch, flour, sugar and salt together and add cold water.
  3. Mix until smooth.
  4. Add egg yolks, mix well, and add slowly the boiling water.
  5. Cook for about 5 minutes, stirring constantly.
  6. Add lemon juice and rind.
  7. Pour mixture into baked pie crust.
  8. Beat the egg whites with 3 tablespoons of sugar and beat stiff to form a meringue.
  9. Spread thickly over top of pie.
  10. Dust with a little sugar.
  11. Brown in very slow oven (150-225 degrees).
