Ingredients for Lemon Bars Recipe
- 1/2 cup powdered sugar
- 1 cup butter
- 2 cups sugar
- 1 tablespoon flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 beaten eggs
- 1 teaspoon lemon extract or 1 tablespoon grated lemon zest
- 1/4 cup lemon juice

Crust
- Blend the powdered sugar and flour
- Cut the butter into the sugar and flour mixture until it is well blended
- Press the dough into the bottom of a 13 x 9 inch baking pan.
- Bake the crust at 300 degrees F until it is golden brown, about 24-28 minutes

Filling
- Blend the baking powder, salt, eggs, lemon juice and extract in a medium bowl. Mix thoroughly.
- Once the crust is baked, pour the lemon-egg mixture over the still hot crust.
- Bake for 25-30 minutes at 350 degrees Fahrenheit. The top should be just lightly golden and the filling should be soft, but set.
- Once the lemon bars are cool, cut into individual squares.
- Sprinkle with powdered sugar
You may add 1/2 cup coconut to the lemon mixture for lemon-coconut bars.'
