Ingredients for Lemon Bars Recipe

  • 1/2 cup powdered sugar
  • 1 cup butter
  • 2 cups sugar
  • 1 tablespoon flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 beaten eggs
  • 1 teaspoon lemon extract or 1 tablespoon grated lemon zest
  • 1/4 cup lemon juice

Instructions

Crust

  1. Blend the powdered sugar and flour
  2. Cut the butter into the sugar and flour mixture until it is well blended
  3. Press the dough into the bottom of a 13 x 9 inch baking pan.
  4. Bake the crust at 300 degrees F until it is golden brown, about 24-28 minutes

Filling

  1. Blend the baking powder, salt, eggs, lemon juice and extract in a medium bowl. Mix thoroughly.
  2. Once the crust is baked, pour the lemon-egg mixture over the still hot crust.
  3. Bake for 25-30 minutes at 350 degrees Fahrenheit. The top should be just lightly golden and the filling should be soft, but set.
  4. Once the lemon bars are cool, cut into individual squares.
  5. Sprinkle with powdered sugar


You may add 1/2 cup coconut to the lemon mixture for lemon-coconut bars.'
