Ingredients for Left-over Soup Recipe

  • 6-pound roast of beef
  • 2 cold mutton chops
  • Uncooked end of sirloin steak
  • 1 tablespoon salt
  • 4 cloves
  • 4 peppercorns
  • 1 cold fried egg
  • 2 baked apples
  • 1 cup cold boiled onions
  • 2 stalks celery
  • 1 tablespoon mixed herbs
  • 1 cup cold tomatoes or macaroni

Instructions

  1. Cut up the bones and trimmings from the beef, chops, and sirloin steak.
  2. Put meat in 4 quarts of water and put over heat. Add salt, cloves, peppercorns, egg, baked apples, onions, celery, and 1 tablespoon mixed herbs.
  3. Let all simmer until the meat separates from the bones and the water is reduced one-half.
  4. Strain. The next morning, remove the fat, heat stock to boiling point, warm with it 1 cup cold tomatoes or macaroni, and add more seasoning if needed.
