Ingredients for Lamb Breast With Jerusalem Artichokes
- 2½ pounds lamb breast
- 2 pounds Jerusalem artichokes, washed, peeled, pared,
- Cut in pieces
- 2 tablespoons butter
- Seasonings to taste

Instructions
- Put breast of lamb in roasting pan with the seasonings and butter.
- Cook in moderate oven for 30 minutes.
- While the lamb is cooking, boil the artichokes in salted water for 25 minutes.
- Drain off water.
- Put artichokes around the lamb in the roasting pan.
- Finish cooking together, about 5 minutes.
- Then serve.
