Ingredients for Lamb Breast With Jerusalem Artichokes

  • 2½ pounds lamb breast
  • 2 pounds Jerusalem artichokes, washed, peeled, pared,
  • Cut in pieces
  • 2 tablespoons butter
  • Seasonings to taste

Instructions

  1. Put breast of lamb in roasting pan with the seasonings and butter.
  2. Cook in moderate oven for 30 minutes.
  3. While the lamb is cooking, boil the artichokes in salted water for 25 minutes.
  4. Drain off water.
  5. Put artichokes around the lamb in the roasting pan.
  6. Finish cooking together, about 5 minutes.
  7. Then serve.
