Instructions

  1. Split kidneys in two, remove the fat and outer skin and chop fine.
  2. Slightly brown some chopped onion in a tablespoon of butter and add a little chopped parsley, then a tablespoon of Worcestershire sauce, a sprinkling of flour, and stir in the finely chopped kidneys with salt and pepper to taste.
  3. Spread on thin slices of buttered toast, cover with a layer of bread crumbs and Parmesan, cheese and place in a quick oven for fifteen minutes, then serve at once.
