Ingredients for Indian Chutney Recipe

  • 1 pint good vinegar
  • 1/2 sour, unripe apples (peeled, cored, and quartered)
  • 4 ounces stoned raisins
  • 8 ounces brown sugar
  • 2 ounces garlic
  • 2 ounces mustard-seed
  • 2 ounces powdered ginger
  • 2 ounces salt
  • 1 ounce cayenne

Instructions

  1. Boil together the vinegar with apples that have been stewed until soft.
  2. When pulped and cool, add, first pounding them separately in a mortar and afterwards together, the raisins, brown sugar, garlic, and mustard-seed. Mix these well with the ginger, salt, and cayenne.
  3. Put the mixture into an earthenware jar and set the jar in a warm corner until next morning. Place the chutney into small jars
  4. It will keep good a year or two.
