Ingredients for Indian Chutney Recipe
- 1 pint good vinegar
- 1/2 sour, unripe apples (peeled, cored, and quartered)
- 4 ounces stoned raisins
- 8 ounces brown sugar
- 2 ounces garlic
- 2 ounces mustard-seed
- 2 ounces powdered ginger
- 2 ounces salt
- 1 ounce cayenne
Instructions
- Boil together the vinegar with apples that have been stewed until soft.
- When pulped and cool, add, first pounding them separately in a mortar and afterwards together, the raisins, brown sugar, garlic, and mustard-seed. Mix these well with the ginger, salt, and cayenne.
- Put the mixture into an earthenware jar and set the jar in a warm corner until next morning. Place the chutney into small jars
- It will keep good a year or two.
