Ingredients for Imperial Muffins Recipe 1

  • 1/2 cup scalded milk
  • 1/4 cup sugar
  • 1/4 cup vegetable shortening
  • 1 teaspoon salt
  • 1/3 yeast cake
  • 3/4 cup lukewarm water, divided
  • 1 3/4 cup flour, divided
  • 1 cup cornmeal

Instructions

  1. Add sugar and salt to milk. When lukewarm, add yeast cake dissolved in 1/4 cup of the water and 1 1/4 cups flour.
  2. Cover and let rise until light. Add vegetable shortening, cornmeal, remaining flour, and water.
  3. Let rise over night. In morning, fill greased muffin rings two-thirds full.
  4. Let rise until rings are full and bake 30 minutes in hot oven.
  5. Sufficient for twelve muffins.
