Ingredients for Impanada Recipe

  • 1 chicken, cut into serving pieces
  • Flour for dredging
  • 3 medium-sized sweet potatoes, peeled and sliced
  • 6 medium-sized white potatoes, peeled and sliced
  • 2 onions, sliced
  • Few slices bacon
  • Salt and pepper to taste
  • 1 can chopped tomatoes
  • 2 tablespoons butter, melted
  • 1 tablespoon vinegar

Instructions

  1. Dredge chicken pieces in flour.
  2. Line deep dish with slices of sweet potato and white potato. Layer chicken, onion, bacon, and tomatoes. Season with salt and pepper to taste.
  3. Mix melted butter and vinegar together and pour over casserole.
  4. Top with remaining sweet and white potatoes.
  5. Bake at 325 degrees from 2 to 3 hours, checking periodically for doneness. Dish is done when potatoes are tender and chicken is cooked through.
  6. Serve hot.
