Instructions

  1. Chop up the amount of cold potatoes desired rather fine; season with salt and pepper, and then add 1/4 cup of cream.
  2. Into a hot frying-pan put 1 tablespoon of butter; when it is heated without burning, put in the potatoes, packing down evenly, stand over a hot fire for five minutes, then draw one side to moderate heat, and cover so that the potatoes may become thoroughly heated and steamed throughout, the bottom browning.
  3. When done, fold over as for an omelet; serve on hot platter garnished with parsley.
