Instructions

  1. Chop fine scraps of beef or mutton, cooked or uncooked, to the amount of about a pint, season with salt and pepper, and pour on a cup of hot water.
  2. Let boil for a few minutes, thicken with a little flour, then place in shallow granite pan ready for the oven.
  3. Now take two good-sized onions, chop them fairly fine and boil until tender.
  4. Drain and spread them over hash, then make a dressing of a half-pint of bread crumbs, one egg, well beaten, two tablespoons of melted butter, salt, pepper and a little sage.
  5. Mix thoroughly and spread on top of the onion in the dish.
  6. Bake in a moderate oven twenty minutes.
