Ingredients for Haricot (lima) Beans (a La Maitre D'hotel) Recipe

  • 1 pint lima beans, shelled
  • 2 quarts water
  • 1/2 teaspoon salt
  • 1 ounce fresh butter
  • Pepper and salt, to taste
  • 2 teaspoons scalded and chopped parsley
  • 1 tablespoon lemon juice

Instructions

  1. Put water and 1/2 teaspoon salt into a stewpan.
  2. When boiling, add freshly shelled beans and let them simmer gently until soft.
  3. Drain beans and put them into a saucepan with butter, pepper and salt, parsley, and lemon juice.
  4. Shake the saucepan over the fire until they are well mixed and serve as hot as possible.
