Instructions
- The hard sauce which accompanies plum pudding is seldom made exactly as it should be.
- First, if possible, use unsalted butter or butter from which the salt has been well washed, then add to it powdered sugar, never granulated, or what is called confectioners' sugar.
- Beat one cup of the butter till very creamy, then add two cups of the powdered sugar, then gradually the unbeaten whites of two eggs and the flavoring.
- Set it on the ice to chill.
- When ready to serve, put it in a cut glass dish and with the point of a teaspoon mark little scales all over the mound.
