Ingredients for Hamburg Croquettes Recipe 1
- 1 pound Hamburg steak (ground beef)
- 1 small tart apple, peeled and chopped
- 1/3 cup bread crumbs
- ½ tablespoon corn syrup
- 1/3 cup hot milk
- 1 egg, yolk separated from white
- 1 teaspoon onion juice
- 1 teaspoon salt
- Few grains pepper
- Few grains nutmeg
- Fine, dry bread crumbs
- 1/3 cup cold milk

Instructions
- Soak the crumbs in the milk for 5 minutes.
- Combine milk, ground beef, chopped apple, corn syrup, egg yolk, onion juice, and seasonings.
- Form mixture into small balls, a scant tablespoon each; roll in bread crumbs, then in the egg white slightly beaten and mixed with the cold milk; roll in bread crumbs again.
- Fry in deep corn oil (corn oil) heated to 350 degrees F., or until a bit of bread will brown in 1 minute.
- Drain on crumpled paper (or paper towels) and serve with tomato sauce.
