Ingredients for Hamburg Croquettes Recipe 1

  • 1 pound Hamburg steak (ground beef)
  • 1 small tart apple, peeled and chopped
  • 1/3 cup bread crumbs
  • ½ tablespoon corn syrup
  • 1/3 cup hot milk
  • 1 egg, yolk separated from white
  • 1 teaspoon onion juice
  • 1 teaspoon salt
  • Few grains pepper
  • Few grains nutmeg
  • Fine, dry bread crumbs
  • 1/3 cup cold milk

Instructions

  1. Soak the crumbs in the milk for 5 minutes.
  2. Combine milk, ground beef, chopped apple, corn syrup, egg yolk, onion juice, and seasonings.
  3. Form mixture into small balls, a scant tablespoon each; roll in bread crumbs, then in the egg white slightly beaten and mixed with the cold milk; roll in bread crumbs again.
  4. Fry in deep corn oil (corn oil) heated to 350 degrees F., or until a bit of bread will brown in 1 minute.
  5. Drain on crumpled paper (or paper towels) and serve with tomato sauce.
