Ingredients for Ham and Bean Soup Recipe

  • 1 pound dry yankee beans
  • 4 cups chicken broth
  • 1 ham hock
  • 1 cup carrots, chopped
  • 1/2 stalk celery, chopped
  • 1 cup onion, chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon mustard powder
  • 2 bay leaves
  • 2 cups chopped ham
  • 1/2 teaspoon ground white pepper

Instructions

  1. Bring the chicken broth to a boil.
  2. After rinsing and sorting the beans, place them in the chicken broth.
  3. Remove from heat and let sit for 1 hour.
  4. Bring the beans back to a boil and add the shank, vegetables, and seasonings.
  5. Reduce to low and let simmer for 1 hour.
  6. Add ham, remove the shank, and continue to simmer for 30 minutes.
  7. Use pepper to taste.
