Ingredients for Halibut Withh Olives And Egg Plant Recipe

  • 2 pounds halibut, in 2 pieces
  • 1 egg plant, peeled, sliced thin
  • 1 cup olives, green, pitted, chopped
  • 3 tablespoons butter
  • 1 onion, peeled, chopped fine
  • ½ cup water
  • Seasonings to taste

Instructions

  1. Put the halibut in a buttered roasting pan.
  2. Cover with the egg plant.
  3. Season.
  4. Pour the water in the pan.
  5. Add the butter cut in small pieces, the onion and olives.
  6. Bake in moderate oven for about 20 minutes.
  7. Then serve.
