Ingredients for Greek Potatoes Recipe

  • 6 potatoes, chopped and peeled
  • 1/3 cup Extra Virgin Olive Oil
  • 1 cup water
  • ½ cup chicken broth
  • 2 garlic cloves, minced
  • 1/4 cup lemon juice
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 3 chicken bouillon cubes
  • Black pepper to taste

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a medium-sized bowl, combine olive oil, broth, water, garlic, lemon juice, thyme, rosemary, bouillon cubes, and pepper.
  3. Place potatoes evenly in the bottom of a 13 X 9” baking dish.
  4. Pour olive oil mixture on top of the potatoes.
  5. Place aluminum foil over top and bake for 1 ½ to 2 hours in the stirring occasionally, until tender but firm.
