Ingredients for Greek Potatoes Recipe
- 6 potatoes, chopped and peeled
- 1/3 cup Extra Virgin Olive Oil
- 1 cup water
- ½ cup chicken broth
- 2 garlic cloves, minced
- 1/4 cup lemon juice
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 3 chicken bouillon cubes
- Black pepper to taste
Instructions
- Preheat oven to 350 degrees F.
- In a medium-sized bowl, combine olive oil, broth, water, garlic, lemon juice, thyme, rosemary, bouillon cubes, and pepper.
- Place potatoes evenly in the bottom of a 13 X 9” baking dish.
- Pour olive oil mixture on top of the potatoes.
- Place aluminum foil over top and bake for 1 ½ to 2 hours in the stirring occasionally, until tender but firm.
