Ingredients for Grapefruit Marmalade Recipe 1

  • 6 grapefruit
  • 4 lemons
  • 3 pints cold water for each pound of fruit
  • 1 pound sugar to each pound of fruit/water

Instructions

  1. Cut each fruit in quarters and slice the quarters through pulp and rind as thin as possible, discarding all seeds.
  2. Weigh the prepared fruit and add three pints of cold water to each pound of fruit.
  3. Set aside for twenty-four hours.
  4. Let boil gently until the rind is perfectly tender, then set aside until the next day.
  5. Weight the material and add 1 pound of sugar to each pound of mixture.
  6. Let cook, stirring occasionally to avoid burning. When it thickens, pour it on a cold dish. The mixture will thicken still more on cooling and care must be taken not to cook it too much.
  7. Store as jelly.
