Ingredients for Grape Juice Charlotte Russe Recipe

  • 1 teaspoon of granulated gelatine
  • 1 egg white
  • 1 tablespoon of lemon juice
  • 1/4 cup of grape juice
  • 1/2 cup of double cream
  • 1/2 cup of sugar
  • Candied violets
  • 1/2 cup of hot grape juice
  • Ladyfingers

Instructions

  1. Soften the gelatine in the 1/4 cup of grape juice.
  2. Add both to the hot juice and let gelatin dissolve.
  3. Add sugar and lemon juice and let the mixture become cold.
  4. Beat egg white dry and gradually mix the grape mixture into it.
  5. Continue beating until the mixture will hold its shape, then pour into glasses lined with ladyfingers.
  6. With pastry bag and star tube, decorate with the cream, beaten firm, and the candied violets.
