Ingredients for Glace Fruits Recipe

  • 2 cups sugar
  • 1 cup water
  • Fruit
  • 2 tablespoons lemon juice or 1/8 teaspoon cream of tartar

Instructions

  1. Make a syrup of the sugar and water.
  2. Boil, without stirring, to the hard crack stage, or 3800 degrees F.
  3. Remove the saucepan from the fire and set it in an outer pan of boiling water to prevent the syrup from hardening.
  4. Add the lemon juice.
  5. Dip the fruits, one at a time, into the hot syrup.
  6. Remove and place on an oiled paper to dry.
