Ingredients for Giblet Soup Recipe 2

  • Giblets from 1 turkey or 2 chickens (heart, liver, gizzard)
  • Wings and neck
  • 2 onions, peeled, chopped fine
  • 2 tablespoons celery, washed, chopped fine
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 6 cups water
  • Seasonings to taste

Instructions

  1. Put butter and onions in a stew pan.
  2. Fry lightly without allowing the onions to color.
  3. Mix in the flour and add the celery and seasonings.
  4. Pour in slowly the water, stirring constantly.
  5. Add the giblets, wings, and neck.
  6. Cover.
  7. Let boil slowly for 35 minutes.
  8. Strain through a strainer and serve.
