Ingredients for German Toast Recipe 1

  • 1 pint leftover cold stew or fricassee
  • 3 eggs
  • 1 tablespoon chopped parsley
  • 1 onion, finely minced
  • Several pieces of toast
  • Bread crumbs
  • Lemon juice

Instructions

  1. Mince the cold stew or fricassee.
  2. Mix in 2 well-beaten eggs, chopped parsley, and onion.
  3. Stir the mixture over a low heat until it is thick. Increase heat to a boil until 1/3 of mixture has boiled away.
  4. Let it cool.
  5. Spread it on pieces of toast, brush it over with beaten egg, strew bread crumbs on the top, and bake ay 350 degrees for 15 minutes or until toast is thoroughly heated through.
  6. Just before serving, sqeeze a little lemon juice over the toast.
