German Potato Salad Recipe 2

Ingredients for German Potato Salad

  • 6 medium sized potatoes
  • ¼ lb. fat bacon
  • 1 small onion
  • 2 teaspoons salt
  • ¼ teaspoon black pepper
  • ½ cup hot vinegar
  • ½ cup hot water
  • 2 tablespoons salad oil
  • Boil the potatoes and after draining set them over the fire to dry. Peel and slice while warm. Cover at once with dressing made as follows:

Instructions

  1. Cut the bacon into small dice, put in frying pan over a slow fire.
  2. Shred the onion into a large bowl, add salt, hot vinegar and hot water.
  3. When the fat is a light brown color and the dice well crisped, add the salad oil and pour it into the vinegar and onion, turning it slowly at first lest it spatter.
  4. Serve on crisp lettuce leaves, garnish with pickled beets.
  5. Best served as soon as made.
