Ingredients for Game Soup Recipe

  • 2 grouse or partridges (you may substitute 2 rabbits)
  • 1/2 pound lean ham
  • 2 medium-sized onions
  • 1 pound of lean beef
  • 2 stalks of celery cut into inch-lengths
  • 3 quarts of water
  • fried bread
  • Pepper and salt to taste

Instructions

  1. Joint the game neatly. Cut the ham and onions into small pieces and fry all to a light brown.
  2. Put into the soup-pot with the beef, which has been cut into strings, and a little pepper.
  3. Pour the water on. Heat slowly and stew gently for two hours.
  4. Take out the pieces of bird and cover in a bowl. Cook soup for an hour longer, strain through a sieve, and, when cool, drop in the 2 stalks of celery.
  5. Simmer for ten minutes, pour upon fried bread in the tureen.
