Ingredients for Fruit Fritters

  • 1 scant cup flour
  • 2 tablespoons Argo or Kingsfords Cornstarch
  • 1/3 teaspoon salt
  • 2 eggs
  • 1 teaspoon corn oil
  • 2/3 cup milk
  • 1 cup prepared fruit
  • 1 teaspoon baking powder

Instructions

  1. The fruits that may be used in making these fritters are: thinly sliced apple; sliced, fresh or canned peaches; stoned, halved prunes or sliced bananas.
  2. Sift together the dry ingredients, then beat in the milk, the egg yolks, beaten till creamy and the corn oil.
  3. Stir in the fruit, fold in the egg whites, whipped, and drop by small tablespoons into corn oil heated to 350 degrees F., sufficient to brown a bit of bread in a minute in a deep fat frying kettle.
  4. Cook ten minutes, drain on brown paper, dust with sugar and serve with fruit sauce or corn syrup.
