Ingredients for Fruit Drop Cakes Recipe

  • 1 cup sugar
  • ½ cup vegetable shortening
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 4 tablespoons currants
  • 4 tablespoons chopped nut meats
  • 2 tablespoons chopped candied citron peel
  • 3 eggs
  • 2/3 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Cream vegetable shortening and sugar together, add yolks of eggs well beaten.
  2. Beat whites stiffly and add alternately with milk.
  3. Add sifted flour, baking powder and salt, then fruits, nuts and extract.
  4. Divide mixture into vegetable shorteninged and floured gem pans, and bake twenty minutes in moderate oven.
  5. Sufficient for eighteen drop cakes.
