Ingredients for Fruit Cake Recipe 3

  • 1 cup sugar
  • ¾ cup solid vegetable fat
  • 4 eggs
  • 1/3 cup molasses
  • 1 teaspoon vanilla
  • 3 cups raisins
  • ½ cup diced lemon peel
  • ½ cup diced orange peel
  • 1-½ cups diced citron
  • ½ cup chopped walnuts
  • 2 cups flour

Instructions

  1. Put the fat, the squar, and the vanilla into a bowl, and work until white and creamy.
  2. Add a few grains of salt to the eggs, beat with a Dover beater until very light, and work into the creamed mixture.
  3. Add the molasses, and beat a few hard strokes.
  4. Then add the fruit and the nuts, and mix thoroughly.
  5. Lastly fold in the flour, and bake in a slow oven from 1 hour to 1-1/2 hours, depending on the thickness of the cake.
  6. When orange and lemon rind are unobtainable, use raisins or currants instead.
