Fried Smelts Recipe

Instructions
Prepare smelt in the following manner: Cut off the tails, split open and take out the backbone and insides of each fish. Wash and wipe dry. Sprinkle inside and out with salt and pepper
Next, choose a method of frying:
- Fry in hot oil.
- Serve with tartar sauce.
or
- Coat the smelt with breadcrumbs.
- Saute in fat drippings or butter.
- Serve with with Hollandaise sauce.
or
- Roll each smelt in flour, white cornmeal or a combination of the two.
- Fry in hot oil until crisp and browned.
