Fried Smelts Recipe

Instructions

Prepare smelt in the following manner: Cut off the tails, split open and take out the backbone and insides of each fish. Wash and wipe dry. Sprinkle inside and out with salt and pepper

Next, choose a method of frying:

  1. Fry in hot oil.
  2. Serve with tartar sauce.

or

  1. Coat the smelt with breadcrumbs.
  2. Saute in fat drippings or butter.
  3. Serve with with Hollandaise sauce.

or

  1. Roll each smelt in flour, white cornmeal or a combination of the two.
  2. Fry in hot oil until crisp and browned.
