Fried Pork Cutlets Recipe

Instructions

  1. Take off the skin and extra fat from a loin of pork, chop it into cutlets; fry them in a lump of butter till a bright brown.
  2. Have ready the bones and any trimmings from ham or bacon, and brown them with a couple of sliced onions; cover with water and boil for two hours; then strain and skin.
  3. Pour this liquor into another saucepan, and thicken with a little isinglass, and add a small quantity of browning for a color.
  4. Brush this glaze over the cutlets, put them on a hot dish, and turn over some hot tomato sauce; serve immediately.
