Ingredients for Fried Drop Cakes Recipe

  • 1 1/3 cups flour
  • 2½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1/3 cup sugar
  • ½ cup milk
  • 1 egg
  • 1 teaspoon melted butter

Instructions

  1. Beat egg until light and fluffy.
  2. Add milk.
  3. Sift dry ingredients together and add to egg/milk mixture.
  4. Add melted butter.
  5. Drop by spoonfuls in hot, new, deep fat; fry until light brown and cooked through -- test doneness by piercing with a skewer, or breaking apart.
  6. Remove with a skimmer, and drain on brown paper.
