Ingredients for Fried Cornmeal Nut Cakes Recipe

  • 2 cups yellow cornmeal
  • 2 tablespoons melted vegetable shortening
  • 3 cups boiling water
  • 1 teaspoon salt
  • 1 egg
  • ½ cup chopped nut meats

Instructions

  1. Bring water and salt to boil.
  2. Stir in cornmeal, add nut meats, and stir. Cook for ten minutes.
  3. Remove from heat, add well-beaten egg and melted vegetable shortening.
  4. Turn into vegetable shorteninged tin and cool. When cold, slice and fry in hot vegetable shortening and serve with honey or maple syrup.
  5. Sufficient for eight slices.
