Ingredients for Fried Cornmeal Nut Cakes Recipe
- 2 cups yellow cornmeal
- 2 tablespoons melted vegetable shortening
- 3 cups boiling water
- 1 teaspoon salt
- 1 egg
- ½ cup chopped nut meats
Instructions
- Bring water and salt to boil.
- Stir in cornmeal, add nut meats, and stir. Cook for ten minutes.
- Remove from heat, add well-beaten egg and melted vegetable shortening.
- Turn into vegetable shorteninged tin and cool. When cold, slice and fry in hot vegetable shortening and serve with honey or maple syrup.
- Sufficient for eight slices.
