Ingredients for Fried Chicken, Mexican Style Recipe
- 1 tender chicken, cut into serving pieces
- Salt and pepper to taste
- 1 clove garlic
- 1 seeded green pepper, chopped
- 2 large tomatoes, peeled and chopped
- 5 tablespoons butter
- Corn croquettes
For Croquettes
- 2 tablespoons butter
- 1 can or 14 ears corn
- 2 tablespoons flour
- 2 cups milk
- ½ teaspoon sugar
- Pepper and salt to taste
- 1 egg
- Breadcrumbs
Instructions
Mexican Style Recipe for chicken
- Sprinkle chicken with salt and pepper.
- Heat butter in frying pan, add clove of garlic and pepper pieces.
- When garlic turns brown take out, put chicken in, fry till brown.
- Add tomatoes to pan; stir. Cook 10 minutes, and then lower heat and cover closely. Allow to simmer till done.
For croquettes
- Drain liquor from can of corn, or grate ears, and chop kernels fine.
- Blend melted butter and flour together in pan over fire; add milk, stir till boiling and cook five minutes, stirring all the time.
- Add seasonings and corn, and cook five minutes, then allow to cool.
- When cold, form lightly with floured hands into neat croquettes. Brush over with beaten egg, coat with crumbs and fry in hot vegetable shortening to a golden brown.
- Drain.
- Place chicken on hot platter, garnish with croquettes and serve hot.
